Let’s just discuss for a moment that tomorrow is September 1st. Like how on earth did that happen?! I literally have about 12 more bbq/summer recipes that I wanted to get through on the blog- so I suppose I will be headed into overdrive the next few days to get those out to you! This recipe couldn’t come at a better time- tomorrow is the start of Labour Day Weekend, the unofficial end to summer. Which means BBQ’s and pool parties but the caveat is that no one wants to spend that much time in the kitchen! It is the end of summer after all-let’s try to enjoy it as much as possible!
So today on the blog I’m sharing a delicious and easy food hack- I call it a hack because it’s not really a recipe. It’s a super easy salad that you can put together in mere moments. It’s got a grill component which definitely makes it Labour Day appropriate. And once the grilling is done, the salad takes roughly 3 minutes to put together. SO EASY! Peach Prosciutto Salad
yields 4-6 servings
- 3 peaches
- oil for drizzling
- 100 grams thinly sliced prosciutto
- 4 bocconcini or mozzarella balls similar in size to your peaches
- 2 sprigs fresh basil
- balsamic glaze
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
Heat grill on medium heat.
Cut peaches into thirds or quarters, vertically, depending on thickness of peach.
Drizzle peach with olive oil on both sides.
Grill 4-5 minutes per side, until fully cooked but still firm. Set aside.
Cut mozzarella into vertical slices. Set aside in plate and salt to taste.
Arrange on platter: Alternate between grilled peaches, mozzarella, prosciutto and basil.
Season with salt and pepper.
Drizzle with balsamic glaze and oil. Serve and enjoy!
