Happy Friday friends! I’m back with another amazing cocktail to share with you all! I’ve been on a huge gin and tonic kick as of late, and this cocktail follows along that line. Super simple ingredients, not much actual work and a whole lot of fun. Sounds just perfect for the weekend, right?!

Lemonade Gin and Tonic
- 1 ounce gin
- 1 ounce St. Germaine Liqueur
- 1 ounce thyme simple syrup
- 1 tsp lemon juice
- Tonic to top
- Thyme sprigs as garnish optional
Fill a tall glass quarter way through with ice.
Pour in gin and St.Germaine. Top with lemon juice and simple syrup. Stir to combine. Top off with tonic and garnish with extra sprigs of thyme.
For the simple syrup, combine equal parts sugar and water in a small saucepan. Add 3-4 sprigs thyme and set to boil. Once water boils, reduce heat and simmer for 20-30 minutes. Turn off and set aside. Once cooled, remove sprigs. Liquid can be kept in fridge for several days.
