We probably eat way too much takeout and restaurant food- from pizza, to Greek food to Indian. I don’t discriminate and I love it all. We actually just went to a Vietnamese restaurant tonight- so good! But since it’s technically still summer, and we have a few trips left in the works (aka bathing suits), I’ve got to lighten it up at home. Enter this yummy Chinese Chicken Salad. This Asian inspired dish hits all the right flavours- dare I say it tastes a little like the Baton Rouge version. Yet it’s still light and satiating! I opt for grilled chicken, but you can always swap it out for my favroutie sesame chicken if you want something a little more fun!
Best of all, the salad lives up to my motto of easy living and quick recipes. You can make all of it ahead of time and just assemble moment of. This salad is simple and doesn’t dirty up too many dishes. It’s tasty but still light. And it’s bound to become a family favourite. Read on for the recipe!
Chinese Chicken Salad
Makes two big salads or 4-6 side servings
You will need:
- 2 cup shredded asian slaw mix (or you can make your own using cabbage, carrots and red cabbage!)
- 1 cup cooked edamame beans
- 1 1/2 cup cooked broccoli
- 4 cups shredded romaine lettuce
For the Sauce:
- 1 tbsp soy sauce
- Quarter cup rice wine vinegar
- Fresh ginger, one inch piece grated
- 1 tsp sesame oil
- 1 1/2 tsp brown sugar or agave syrup
First, combine slaw, beans, broccoli, and lettuce in a large bowl. Set aside.
In a small mixing bowl, combine all sauce ingredients and whisk together .
Pour sauce into large bowl and mix well.
Top with sesame chicken or honey soy chicken and serve.
You can make this ahead of time, just make sure to reserve adding sauce until food is served
