With Easter just a quick week away, it’s time to get that menu sorted! As you’ve learned by now, I love recipes that can be prepped ahead of time leaving you with no last minute stress. These mini quiches are just that. So easy to make, customizable to everyone’s taste buds and they make for the prettiest presentation. Obviously they’re great for all entertaining, not just Easter. I love them for a big cozy brunch in! Read on for the recipe!
- 5 eggs
- 1/4 cup heavy cream or half and half
- 1/4 cup crumbled feta cheese any cheese will do however!
- 1/2 cup toppings of your choice * I used a mix of roasted zucchini and sautéed kale.
- Salt and pepper to taste

Roasted red peppers
Sautéed spinach and garlic
Preheat oven to 375 degrees Fahrenheit.
Crack eggs open into a large mixing bowl. Add in cream and whisk in together. Add in toppings and cheese. Stir together with a wooden spoon. Season with salt and pepper. Stir once more.
Evenly distribute mixture into four small quiche or pie pans. My scalloped dishes are actually pie dishes that I thought would be the cutest! Mini Ramekins also work.
Bake for 20-25 minutes until center is fully set.
Garnish with parsley and serve.
