Hello first full week of summer! Whether you’re out of town, enjoying a staycation or just living your normal day to day life, this is a great week!! I’m a total summer baby so it goes without saying that I live for this time of year- from bbqs to pool parties to just plain ol’ walks around the neighbourhood, I’m 100 percent #teamsummer. And what better way to spend summer than with a perfect frozen Bellini? I use sparkling wine twice in this recipe- I find the extra bubbles make the cocktail a little less sweet than your typical slushy drinks- but still delicious. Keep on reading for the recipe!

- 1 750 ml bottle sparkling wine like Cava or Prosecco
- 2 cups frozen sliced peaches if you want to use fresh peaches just slice them and place on a freezer safe dish in the freezer for 1 hour
- 1/2 cup peach nectar
Combine frozen sliced peaches, juice and half of sparkling wine into blender. Blend until smooth.
Fill half of a champagne flute with blended mix and top with more sparkling wine.
Optional: garnish with a peach slice
