As far as I’m considered, we’ve still got 6 weeks of summer to go! That means more fresh salads, light bites and perfect dishes for evening bbqs. This light and satiating Prosciutto and Melon salad falls in all of those categories. Not to mention it’s seriously gorgeous to look at it! It’s perfect for guests because the assembly is so so easy. Like 5 minutes easy. I love the combo of the sweet cantaloupe paired with the salty prosciutto. With the background of arugula to freshen up your palate, it hits all of the right notes! This prosciutto and melon salad is definitely the star of the meal. I’d just pair it with some crusty grilled country bread and a glass of wine! Read on for the super easy and quick recipe!
Prosciutto and Melon Salad
yields 3-4 servings
- 4 cups loosely packed and washed arugula
- 1/2 cantaloupe, seeds removed
- 1 cup mini mozzarella (also known as pearls or bocconcini)
- 100 grams thinly sliced prosciutto 8-10 very thin slices
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- salt and pepper to taste
In a small bowl, whisk together the olive oil, balsamic vinegar and honey. Set aside.
Using a melon scooper, scoop out round even sized melon balls.
Add arugula in a large mixing bowl and top with dressing. Toss well to combine. Plate on a large dish. Top with melon and mozzarella, ensuring that they are evenly spread out. Roll up prosciutto and place gently in various corners of the salad.
Season with salt and pepper, ensuring that the cheese in particular gets some seasoning!
Have a little extra time? Try crisping the prosciutto up on a skillet with just a touch of oil. At 1-2 minutes per side you should have a delicious and crispy addition!
