Move over rosé- the drink of this summer was clearly more orange than pink. An Aperol Spritz to be exact! The perfect refreshing cocktail with a tang of orange and a whole lot of bubbles! Since I’m not a fan of super sweet drinks, I was more than happy to see these orange cups of perfection pretty much everywhere! I mean, we’re talking pop up bars, special patios and everywhere on Instagram!
But why should the fun stop now I say. I’m still loving my Aperol Spritz cocktail but this time with a little dose of fall. Mainly a yummy thyme simple syrup that adds a little coziness to an otherwise perfect cocktail.
Disclaimer: I will drink anything with bubbles all year round- doesn’t matter how cold it gets!
Best of all, thyme simple syrup is a breeze to make. If you’ve been following me for a while you know how much I use them in cocktails- there was this lemon one here, this pomegranate here, and oh yeah this one here. I love that I can make them a few days ahead of time and then just pop them out for cocktail parties- or for myself. No judgement here, right?!
Read on for the recipe and Cheers!!
Thyme Infused Aperol Spritz
Yields 1 cocktail
- 3 ounces Prosecco
- 2 ounces Aperol
- Splash of sparkling water
- 1 tbsp thyme simple syrup
- Orange slices and thyme for garnish
For simple syrup recipe:
In a small saucepan boil equal parts sugar and water. For cocktails I tend to use a 1 cup to 1 cup ratio- it’s enough for several cocktails! Once boiling, reduce heat and add in 3-4 sprigs of thyme. There’s no magic number here! Want the thyme flavour to be more pronounced? Just add in more!
Let simmer for 20 minutes and then turn off heat and let cool. Discard sprigs and reserve liquid. Keep in refrigerator until ready to use.
In a wine glass with a large opening ( I like these ones here!!) add in a handful of ice cubes. Top with Prosecco and Aperol. Add in simple syrup and gently stir. Top with a splash of soda and garnish with orange slices and thyme sprigs.
Serve and enjoy!
